Vegetable toss
1/4 c olive oil
2 T lemon juice
1 tsp garlic
1/2 T thyme
sal and pepper
1 tsp dijon mustard
Toss any variety of vegetables in this mixture. Place on baking sheet sprayed lightly with Pam. Oven roast at 400 degrees for 30 - 45 minutes
